About Our Grass-Fed Raw Milk Cheese
Hanging prominently in Zimmerman's cheeese shop is a sign that reads:
Zimmerman's Farmstead Raw Milk Cheese
is made with milk from cows that are:
- rotationally grazed on green pastures with as much as 30 different varieties of grass, clover and pasture herbs. All which have been free of agricultural chemicals for at least 3 years.
- raised without milk enhancing hormones (BST/RBGH) and are free from trace antibiotics and other drugs.
- cared for humanely and conscientiously on our family farm in the hills of Casey Co. Kentucky
Our cheese is produced, processed and packaged according to the strict guidlines of the milk safety branch in Franklin, Kentucky.
The core philosophy of the Zimmerman family includes resource stewardship, conservation ethics, and promotionof a healthier food supply.
In addition to that sign, here is some more information about our cheese, Elvin himself and his farming philosophy you might find of interest:
- Cows are stricly grass-fed without supplemental grain except when necessary due to climate and weather problems,
and are milked only seasonally - from February to December.
- Elvin's goals include having healthy cows without added grain by balancing soil minerals to maintain pasture fertility.
- Horses are used in a leader-follower system of grazing to help with weed control and stabilize pastures.
- On this small family run dairy farm, 24 cows graze 45 acres.
- Elvin's favorite cheeses are cheddar, colby and swiss "depending on how I am eating it".
- The cheese is stored in a refridgerated room between 50 and 55 degrees Farenheit.
- Non-animal rennet is used in the cheesemaking, so the cheese satifies both vegetarian and kosher requirements.
- All the cheeses are made with special low temperature processes that preserve enzymmes, fragile proteins and special anti-arthritis factors in the milk-fat.
- All the cheeses are made with whole milk from grass-fed cows. The fat content (which is extremely good for you)
is much higher than from conventional dairies, and it is the right kind of fats - the kind which help prevent heart disease and cancer.
