The Little Cheese Shop is a joint venture between the Daniels and Zimmerman families, both located in South-Central Kentucky.
The Zimmermans produce raw-milk cheese from grass-fed cows at their farm located near Liberty, KY. They belong to are an old order Mennonite community, and have no electricity, automobiles or telephones. Elvin Zimmerman had to use a large amount of ingenuity to set up a grade A dairy with an inspected cheese making room without electricity.
The Zimmerman family moved to Kentucky in 2003 and began making cheese in 2004. They have nine children ranging from six months to 16 years old. The younger children help with milking the cows and other chores, while the older ones help with cheesemaking and manning the shop. The family patriarch, Elvin, has been involved in dairy farming since he was 6 years old. As a boy, his mother would make farmers cheese with raw milk. Remembering his mother's cheese and learning about the gourmet and health properties of raw milk cheese, he decided to embark on making such cheeses available for others as well.
The Daniels family also has nine children, and raise all natural, pastured meat, dairy and eggs at their farm - Willow Hills. As an extension of their farm business, they handle the internet end of the Little Cheese Shop. You can read more about their farm at willowhills.org.
